4 SERVINGS
  • 1/2 cup coconut oil (palm would work well too, or butter, Nutiva, Tropical Traditions and Wilderness Family Naturals are great brands.)
  • 1/2 cup almond butter
  • nut
  • 1/4 cup sweetener (granulated, or appropriate substitute, for candida diets, xylitol and erythritol work well. 4-6 scoops stevia extract is a good alternative. **)
  • 6 tablespoons carob powder
  • 3 tablespoons sweetener (additional, I use vegetable glycerine, xylitol, erythritol, or any combination thereof, due to being on a candida diet. Use a little more if using erythritol since it isn’t as sweet. Truvia is a great option as well, here’s how to make your own..)
  • 1 teaspoon vanilla (Spicery Shoppe Vanilla is a great alcohol-free brand.)
  • 1 2/3 cups coconut flakes (unsweetened)
  • 7 tablespoons coconut oil
  • 1/3 cup sweetener (granulated, or 2-3 scoops stevia extract powder. I use NuNaturals.)
  • 1 1/2 teaspoons vanilla
  • 1/4 teaspoon flavoring (additional, optional. Almond or coconut are good choices.)
  • 2 teaspoons arrowroot powder (cornstarch may be substituted. Use 1/16 tsp of xanthan gum or glucomannan if you need to avoid these foods.)
  • almonds (halves or slices, optional)

Will Make again ! Used half coconut butter half coconut oil wherever it called for the oil. Maybe Place almonds in between the two layers instead of on top. Otherwise fell off upon cutting. (Or make sure to push down hard into coconut.) Chocolate layer extremely rich. May double the coconut layer in the future. This was a decadent plant-based treat for my new journey of eating gluten free.
