No-Bake Chocolate Peanut Bars

Ingredients

  • 6 ounces Crispy Rice Cereal
  • 1 1/4 cups powdered sugar (sifted)
  • 4 ounces desiccated coconut
  • 3 ounces dry roasted peanuts (chopped, plus extra to decorate)
  • 1/3 cup cocoa powder (sifted)
  • 1 cup coconut oil
  • 12 ounces crunchy peanut butter
  • 8 oz dark chocoloate, chopped
  • 3 1/2 tablespoons butter (chopped)

Directions

  1. Lightly grease and line an 8 x 12 inch baking dish with parchment paper, extending it 2 inches above the long sides. Combine cereal, powdered sugar, coconut, peanuts and cocoa powder in a bowl and mix well. In a medium saucepan, melt coconut oil on low. Cool 10 mins. Stir in peanut butter. Make a well in cereal mixture and add coconut oil mixture. Press firmly into prepared dish and chill until firm.
  2. Meanwhile for the topping, combine chocolate and butter in a heatproof bowl. Place over a saucepan of gently simmering water. Stir until melted. Pour evenly over chilled cereal mixture. Sprinkle with extra chopped peanuts. Chill until set and cut into squares to serve.
