Description
These delicious cupcakes were inspired by ones created by Nigella Lawson. They feature a butter-based chocolate cupcake that gets its intensity from unsweetened cocoa powder, and a cream cheese frosting that’s piped in a swirly fashion using a pastry bag fitted with a star tip. Ground cinnamon is dusted on top, a la cappuccino.
Ingredients
- 125 grams butter (softened)
- 125 grams sugar
- 125 grams flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 2 eggs
- 2 teaspoons vanilla extract
- 5 tablespoons milk
- 2 tablespoons cocoa powder
- 200 grams light cream cheese
- 125 grams powdered sugar
- ground cinnamon
Directions
- 1Preheat the oven to 180 degrees Celsius.
- 2In a food processor, add the butter, sugar, flour, baking soda, baking powder, eggs, vanilla, and 2 tablespoons of cocoa powder and blend until smooth.
- 3Add 3 tablespoons of milk and mix until completely blended.
- 4Fill two greased cupcake pans 3/4 full with the batter.
- 5Bake for 30 minutes.
- 6Remove from the oven and allow to cool on a cooling rack.
- 7In a bowl, beat the cheese with the powdered sugar and remaining milk. Mix well.
- 8Using an icing bag with a star nozzle, decorate the tops of each cupcake.
- 9Finally, sprinkle with cinnamon or cocoa powder.
