Perfect! Firm and set but not cracked. I used gluten free maize flour biscuits for the base and Schar GF flour, available in supermarkets here in Italy.

Best cheesecake I have ever made! By request of the kids, used graham crackers instead of chocolate cookies for the crust. Loved it. Curious to try with the chocolate cookies or with gingersnaps next time.
