Ingredients

  • 800 grams potatoes (scoop)
  • 30 grams parmesan
  • 30 grams pine nuts
  • 1 bunch basil
  • 4 tablespoons olive oil

Directions

  1. Scrub the potatoes under running water to remove the skin. Boil a large pot of salted water. Boil potatoes for 20 minutes. Drain.
  2. While the potatoes are cooking, prepare pesto. In a frying pan without fat, roast the pine nuts until slightly colored. Cut parmesan into large cubes in a food processor bowl with a sharp knife, or in a chopper, then grind to powder. Add basil leaves, pine nuts, and 2 tablespoons of olive oil. Mix well, add the last 2 tablespoons of olive oil. Add salt only if necessary since the Parmesan is already salty.
  3. Place cooked potatoes in a dish, top with pesto, and mix.
  4. Serve warm, or cold in a salad.
