  • 1 2/3 cups all purpose flour
  • 1 pinch cinnamon
  • 1 egg yolk (medium)
  • 4 ounces butter (softened)
  • 1/4 cup sugar (+ 1-2 tbsp)
  • 6 nectarines (stone removed and cut into thin wedges)
  • 3 ounces red currants
  • 1/3 cup heavy cream

Directions

  1. Mix together the flour, cinnamon, egg yolk, butter, 1/4 cup of sugar and 2-3 tbsp cold water and knead into a smooth dough. Shape into a ball, wrap in plastic wrap and refrigerate for 45 minutes.
  2. Preheat oven to 400°F. Roll the dough out to fit a medium sized, rectangular, greased, tart pan. Push into the edges and prick the base several times with a fork.
  3. Arrange the nectarines over the pastry and scatter over the berries. Pour in the cream, and sprinkle 1-2 tbsp sugar over the top. Bake for 25-35 minutes then remove from oven and allow to cool in the pan for 10 minutes before removing and allowing to cool fully on a wire rack.
