The dawn of the summer months and warmer weather also means the beginning of barbecue season. This recipe for Navy Bean Salad is the perfect accompaniment to any grill out. Combining the fresh flavors of roasted red peppers, green beans, and navy beans in a light tangy sauce, this dish makes a hearty side full of robust flavor, high in protein, and low in calories. Make sure to soak the navy beans overnight in water.

Ingredients

  • 100 grams navy beans
  • 360 grams green beans
  • 185 grams fish (canned Bonito, or tuna, drained)
  • roasted red bell peppers (chopped)
  • 1/4 onion (peeled and chopped)
  • salt
  • olive oil
  • vinegar

Directions

  1. Soak the navy beans in water overnight.
  2. The following day, place the navy beans in a saucepan. Add chilled water and boil for 15 minutes. Lower the heat and continue to cook for 30 minutes until tender. With 5 minutes before they are done, add a pinch of salt. Let the beans cool.
  3. In a bowl, add the navy beans, green beans, canned fish, bell pepper, and onion. Season with a pinch of salt and few drops of oil and vinegar.
  4. Mix well and serve.

This recipe reminds of my aunts house! She was always cooking beans in her pressure cooker! I am glad I can forego that process and still get a great bowl of beans. This dish is hearty and good for you! I serve it with cornbread or homemade biscuits.
