Ingredients

  • 2 tablespoons peanut oil
  • 7 ounces chicken thighs (finely chopped)
  • 10 shrimp (peeled, deveined, halved)
  • 4 green onions
  • 1 inch batons
  • 2 cloves garlic (chopped)
  • 1 red chili (chopped)
  • 1 1/2 pounds long grain rice (cooked)
  • 1/2 tablespoon soy sauce
  • 1 lime (juiced)
  • 1 tablespoon tomato sauce
  • 2 teaspoons fish sauce
  • 1/2 cup cilantro leaves (fresh, plus extra to serve)
  • 4 fried eggs (lime wedges, tomato wedges and cucumber batons, to serve)

Directions

  1. In a large wok or frying pan, heat 1 tbsp oil over high heat. Stir-fry chicken and shrimp for 2-3 mins, until cooked through. Transfer to a large bowl.
  2. Add remaining oil to pan and place over medium heat. Stir-fry green onions, garlic and chili for 1 min, until fragrant. Add rice, stirring to break up any lumps. Add soy sauce, lime juice, tomato sauce, fish sauce and cilantro. Stir-fry for 2-3 mins, until heated through. Serve with fried eggs, lime wedges, tomatoes and cucumber. Top with extra cilantro.
