Ingredients

  • 2 avocados (ripe, peeled, 1 roughly chopped, 1 diced)
  • 1 clove garlic (peeled and roughly chopped)
  • 1 tablespoon lemon juice
  • 30 tortilla chips
  • 3 red chilies (1 deseeded and diced, 2 left whole)
  • 5 ounces mozzarella (grated)
  • red cabbage
  • bean sprouts
  • lime slices

Directions

  1. Place the chopped avocado, garlic and lemon juice in a blender and purée. Season with salt and black pepper. Fold in the diced avocado.
  2. Preheat the broiler. Line a baking tray with parchment paper and spread the tortilla chips on top. Spoon the guacamole onto the chips and sprinkle with the chili rings and cheese. Grill for 2-3 mins, until the cheese is melted.
  3. Transfer to a platter and garnish with the whole chilies, red cabbage, bean sprouts and lime slices.
