  • 3 bell peppers (sweet, seeded and diced)
  • 10 garlic cloves (minced)
  • 1 teaspoon chipotle powder
  • 3 tablespoons smoked paprika (or chipotle powder, depending on heat tolerance)
  • 2 tablespoons chile powder (New Mexico)
  • 5 tablespoons ancho chile powder
  • 2 tablespoons ground cumin
  • 1 tablespoon Mexican oregano
  • 2 teaspoons ground coriander
  • 1 cup beef broth
  • 2 cans crushed tomatoes (each 28 oz.)
  • 15 ounces kidney beans (rinsed and drained, or equivalent cooked)
  • 15 ounces black beans (rinsed and drained, or equivalent cooked)
  • 30 ounces beans (additional cooked, choice, I used a frozen mix of white and brown--canned is fine too)
  • 1/4 cup cornmeal (finely ground, I used blue)
  • 4 ounces sharp cheddar cheese (shredded)
  • 4 ounces jack cheese (Monteresy, shredded)
  • 3 cups tortilla chips
  • guacamole (for serving)
