  • 1 sweet potato (large, peeled and cut in 1/2 inch dice, I used one that weighed almost a pound before peeling)
  • 3 carrots (small, sliced)
  • 2 tablespoons oil
  • 1/2 onion (large, chopped)
  • 3 garlic cloves (minced)
  • 1 1/2 tablespoons gingerroot (minced fresh)
  • 4 cups chicken broth (I use organic low-sodium)
  • 1/4 teaspoon cinnamon (or more to taste)
  • 1/4 teaspoon nutmeg (or more to taste)
  • almond milk (I use Almond Breeze unsweetened original or unsweetened vanilla)
  • ground pepper (fresh)

  • fresh orange juice (optional)
