Enjoy the rich flavor of mussels, mixed with the strong taste of blue or roquefort cheese. Mussels are very meaty, without the flavor of fish. The flavor is enhanced by wine in the sauce. Try substituting different alcoholic beverages to achieve differing flavors.
- 1 kilogram mussels
- 1/2 cup wine
- 200 cups whipping cream
- 100 grams roquefort cheese (may substitute blue cheese)
- Clean the mussels and place into a pan with the wine. Steam until open. Remove mussels from pan, remove the top empty shell from each, and place onto platter.
- Strain the cooking liquid and and add half a cup of it to a saucepan. Add the cream and roquefort cheese. Cook on low heat a few moments until it forms a thick sauce.
- Drizzle the cheese sauce over the mussels and serve.
