Mushrooms with Garlic Phyllo Puffs

  • 3 cloves garlic (finely chopped)
  • 250 milliliters cream
  • 1 tablespoon butter
  • 3 tablespoons olive oil
  • 6 stems parsley (chopped)
  • 10 sheets filo pastry (about 30 cm square)
  • 250 grams mushrooms (small, sliced)
  • 50 grams spinach

    Directions

    1. Place the garlic and cream in a small pan and simmer for 20 minutes, until cream has reduced by half. Season with salt and pepper and allow to cool, stirring occasionally.
    2. Preheat oven to 350°F. Melt the butter and purée with 1 tbsp olive oil and parsley. Cut pastry into 3 inch squares, brush each square with parsley butter, place 2 squares on top of each other and place on a parchment lined baking tray. Bake for about 8 minutes until golden brown.
    3. For the mushrooms, heat 1-2 tbsp oil in a large frying pan and sauté the mushrooms for 3-4 minutes. Season with salt and pepper and set aside. Add the mushrooms and the spinach to the cream, mix well then sandwich between 2 squares of pastry. Serve immediately.
