Ingredients

  • 1 pound sausage casings (Italian, removed, pork or turkey work well)
  • 1/2 sweet pepper (a medium, chopped)
  • 1/2 onions (a medium, chopped)
  • 1 clove garlic (minced)
  • 1/4 cup bread crumbs (your choice, Trim Healthy Mama Baking Blend, or my Local Blend Baking Mix, equal parts almond flour, coconut flour, and golden flax meal)
  • 4 ounces shredded mozzarella cheese
  • 1 ounce shredded cheddar cheese
  • 1 eggs
  • 6 mushrooms (large, mine were palm sized or 12 medium mushrooms)
  • 1 pinch salt
  • 1/8 teaspoon pepper
