- 1 Tbsp. olive oil
- 1/4 onion (peeled and minced)
- 1 tomato (diced)
- 1/4 cup mushrooms (cleaned and sliced)
- 1 poblano pepper (roasted, peeled, seeded, and cut into strips)
- 5 epazote (leaves, chopped)
- salt
- ground black pepper
- flour tortillas
- cheese (shredded)

Directions
- Pour the olive oil into a hot pan and then add the onions and tomatoes. Saute for about 5 minutes.
- Add the sliced mushrooms and saute for another 5 minutes. Add the poblano pepper and epazote leaves.
- Mix everything well and cook for 3 minutes. Add a pinch of salt and black pepper.
- Top half of a flour tortilla with the mixture and add shredded cheese on top. Close the tortilla and serve.
