Ingredients

  • 1 pound button mushrooms (halved or quartered)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic (minced)
  • 1/2 teaspoon chili flakes
  • 4 ounces sun dried tomatoes (roughly chopped)
  • 1 ounce pitted black olives (halved)
  • 13 1/2 ounces artichoke hearts (drained, quartered)

Directions

  1. Combine mushrooms, oil, vinegar, garlic and chili flakes. Set aside to marinate for 30 mins.
  2. Add tomatoes, olives and artichokes. Serve.
