Ingredients

  • 1 cup muesli (untoasted)
  • 1/2 cup flour
  • 1/2 cup flaked coconut
  • 1/2 cup dried apricots (finely chopped)
  • 1/4 cup currants
  • 1/4 cup brown sugar (packed)
  • 6 tablespoons butter
  • 2 tablespoons maple syrup
  • 1/4 teaspoon baking soda

Directions

  1. Preheat the oven to 350°F. Lightly grease 2 large baking pans.
  2. Combine muesli, flour, coconut, apricots, currants and sugar in a medium bowl.
  3. Melt butter and syrup in a small saucepan on low heat. Stir in baking soda. Stir into dry ingredients until well combined.
  4. Drop tablespoons of mixture 2 inches apart on prepared pans. Press lightly with a fork to form a round.
  5. Bake for 10-15 mins until golden. Cool on pans 5 mins. Remove from pans; cool completely on wire racks.
