Ingredients

  • 300 milliliters apple juice
  • 1 egg (small)
  • 25 grams butter (room temperature)
  • 1 pinch salt
  • 2 tablespoons milk powder
  • 1 teaspoon ground cinnamon
  • 125 grams muesli (with fruit + extra for garnish)
  • 425 grams strong flour
  • 60 grams brown sugar
  • 1 1/2 teaspoons yeast (dried brewer’s)
  • milk (for brushing)

Directions

  1. Using a bread maker, add the all the ingredients in the order above, except the milk and extra muesli for garnish, and set the program to ‘basic white bread.’
  2. Just before baking, brush with milk and sprinkle with the extra muesli. Close the lid carefully.
  3. Gently remove the bread with a spatula to keep the shape.

I made this with whole wheat bread machine flour on the 2 lb loaf setting and the cycle for whole grain flours. The loaf came out tall, fluffy and absolutely delicious. It's fantastic toasted, and everyone in the house loved it.

This is a quick breakfast bread that turns out moist and delicious. I slice it up after it cools down, and then wrap the slices individually with cling wrap. I put these pieces of bread by the coffee pot and, then we can grab one for breakfast in the morning.
