Ingredients

  • 3 carrots (peeled)
  • 1 lemon
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon coriander seeds (ground)
  • 1/4 teaspoon sugar
  • ground black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon fresh coriander (chopped)

Directions

  1. Grate the carrots and place them into a bowl. Add the lemon juice and mix well.
  2. Add the cumin, coriander seeds, sugar, salt and black pepper to a spice grinder or food processor. Add the spice mixture to the carrots.
  3. Add the olive oil and coriander to the carrots and toss well.
  4. Cover the bowl with plastic wrap and place it in the refrigerator for 6 hours before serving.

These carrots have true Moroccan flavor. I served them matbucha, a tomato and roasted red pepper dish, and Moroccan lamb. They would also be a refreshing and colorful side for spicy Moroccan chicken!
