Ingredients

  • 3 carrots (peeled)
  • 1 lemon
  • 1/2 tsp. ground cumin
  • 1/8 tsp. coriander seeds (ground)
  • 1/4 tsp. sugar
  • ground black pepper
  • 1 Tbsp. olive oil
  • 1 Tbsp. fresh coriander (chopped)

    Directions

    1. Grate the carrots and place them into a bowl. Add the lemon juice and mix well.
    2. Add the cumin, coriander seeds, sugar, salt and black pepper to a spice grinder or food processor. Add the spice mixture to the carrots.
    3. Add the olive oil and coriander to the carrots and toss well.
    4. Cover the bowl with plastic wrap and place it in the refrigerator for 6 hours before serving.
