Molasses Roasted Tenderloin with Minted Mango Relish

A healthy and delicious dinner using fresh mangoes. Serve with rice tossed with cashews and steamed asparagus.


  • 2 pork tenderloins (about 1 pound each)
  • 1/3 cup orange juice
  • 2 Tbsp. molasses
  • 1 Tbsp. fresh ginger root (grated)
  • 1 tsp. ground coriander
  • 1 mango (peeled and diced)
  • 2 Tbsp. fresh mint (chopped)
  • 2 Tbsp. dried cranberries
  • 1 Tbsp. seasoned rice vinegar
  • 1/4 tsp. red pepper flakes

    1. In a heavy-duty resealable plastic bag, combine all ingredients except Minted Mango Relish (pork tenderloins, orange juice, molasses, ginger root, coriander); seal bag and refrigerate for 4 to 24 hours.
    2. Remove pork from marinade and place in shallow roasting pan. Discard marinade. Roast pork in a 450 degrees F. oven for 20 to 27 minutes, until internal temperature reads 145 degrees F. Remove pork from oven; let rest for 5 minutes before slicing to serve with Minted Mango Relish (instructions follow).
    3. Minted Mango Relish: In small bowl, stir together diced mango, mint, cranberries, rice vinegar and crushed red pepper.
