Description

Rich and chocolatey yet airy and light, this mocha cake is a marvel to make and to eat. Bittersweet cocoa powder and melted dark chocolate flavors the batter, which is made by first creaming softened butter and sugar. The key to creating its lofty texture is to fold well-beaten egg whites into the batter just until combined, and just before baking, else they lose their lifting power.

Ingredients

150 grams butter
180 grams sugar
3 eggs
50 grams potato starch
50 grams almond flour
50 grams all-purpose flour
50 grams cocoa (bittersweet, powdered)
100 grams dark chocolate
3 ounces espresso
salt
bitter almond extract

Directions

1Preheat the oven to 180C.
2Beat the egg whites to stiff peaks with a pinch of salt.
3Combine the potato starch with the flour, almond flour and bittersweet cocoa.
4Melt the dark chocolate over a double boiler.
5Cream the butter with the sugar.
6Add the 3 egg yolks, then add the dry ingredients, the melted chocolate, the coffee, and the almond extract.
7Use a wooden spoon to fold the beaten egg whites into the mixture.
8Bake for approximately 35 minutes or until a toothpick inserted in the center comes out clean.
9Cool the cake completely and sprinkle with powdered sugar.
