Made a few times now and awesome every time! I use closer to 2 3/4 cup confectioners sugar and find it plenty sweet. This has become a staple!

Yummy!!!! Even my usually picky child went back for extra servings. The only thing I would change is use only 3 cups of confectioners sugar in the icing to make it a little less sweet.

Excelent. I tried it without the pinnaple. and it worked great. just check the nutmeg is not in clumps and everything will go great.

I made this cake for my husbands birthday. It was the best carrot cake we’ve ever had!! I added about 1/2 cup of coconut. I will definitely make again.

Wonderful, moist, easy. Will never make any other carrot cake. I used pineapple jc. In frosting and was incredible

It's perfect for tea time I love it, it's more moister, tastier and aromatic, I'll used coconut milk instead of canola oil and the result is very perfect, I can't wait to post it on my wall for orders :-) ...thank you recipe
