Bring the flavors of the boardwalk to your kitchen with this recipe for Mock Shrimp Patties. Made with a mixture of shrimp, onion, parsley, a flour blend of chickpea and wheat flours, and water, the shrimp patties are fried in olive oil until golden and crunchy on both sides. Let the mixture sit for two to three hours before frying in order to let the flavors develop and to ensure the mixture holds together when fried.

Ingredients

  • 8 ounces all purpose flour
  • 8 ounces chickpea flour
  • 16 ounces water
  • 8 ounces shrimp (small, shelled and cleaned)
  • 4 ounces onion (finely diced)
  • 4 ounces fresh parsley (finely diced)
  • 1 teaspoon sea salt
  • olive oil (for frying)

Directions

  1. Whisk together the all-purpose flour, chickpea flour, and water until there are no more lumps.
  2. Stir in the shrimp, onion, parsley, and salt.
  3. Let the mixture sit 2 to 3 hours.
  4. In a large skillet heat up 1 to 2 fingers of olive oil on medium-high heat.
  5. Drop ladlefuls of the batter into the hot oil and fry until golden and crunchy on both sides.

I don't know why these are called "mock shrimp" patties since they have shrimp in them. This is a really great dish!
