Description

Baked as a pie using puff pastry crust, this eggy quiche gets an Italian twist thanks to a mixed cheese and mortadella filling. After a few minutes uner the broiler to turn bubbly and browned, it's ready to be enjoyed warm or at room temperature — ideally with a lightly dressed green salad. Any mix of hard cheeses such as Fontina, Asiago and Montasio, should work well.

Ingredients

1 pastry dough (round sheet of puff)
200 grams semi-hard cheese (or mixed hard, fontina, asiago, montasio)
100 grams mortadella (one thick slice)
2 eggs
250 grams heavy cream
1/2 cup milk
100 grams grated parmesan cheese
salt and ground black pepper (as needed)

Directions

1Preheat the oven to 190C.
2Line a pie plate with wax paper and add the puff pastry crust.
3Cut the cheeses and mortadella into small pieces and combine them in a bowl.
4Spread them over the pie crust.
5Beat the eggs, the heavy cream, the milk, the grated cheese, the salt and the pepper in a bowl and pour over the cheese and mortadella pieces in the pie crust.
6Bake for approximately 25 minutes, turn the broiler on during the last 5 minutes.
7Remove the quiche from the oven and serve warm.
