Ingredients

  • 1 cup powdered sugar (plus extra to dust)
  • 1/4 cup all purpose flour
  • 1 1/4 cups ground almonds
  • 2 teaspoons lemon zest
  • 3/4 cup butter (lightly browned, cooled)
  • 5 egg whites
  • 2 1/2 ounces frozen mixed berries
  • 1/2 cup sliced almonds
  • heavy cream (to serve)

Directions

  1. Preheat oven to 400°F. Lightly grease eight 2 1/2 inch loose-bottomed tart pans.
  2. Sift powdered sugar and flour together into a medium bowl. Add ground almonds, lemon zest and butter. Whisk egg whites until frothy then fold into dry ingredients until combined. Distribute between tart pans. Arrange berries over top and sprinkle with almonds. Bake for 10 mins. Reduce heat to 350°F. Bake for another 8-10 mins, until golden.
  3. Serve warm, dusted with powdered sugar and heavy cream on the side.
