  • 1/2 cup heavy cream
  • 1 tablespoon powdered sugar (plus extra, for dusting)
  • 1 teaspoon vanilla extract
  • 8 3/4 ounces mascarpone
  • 2 tablespoons honey
  • 4 slices brioche (toasted)
  • 10 1/2 ounces frozen mixed berries (thawed)
  • fresh mint (to garnish)
  • ground cinnamon (to dust)

Directions

  1. Whip heavy cream, powdered sugar and vanilla extract to soft peaks. Fold into mascarpone.
  2. Spread honey then whipped mascarpone over toasted brioche. Top with berries. Garnish with mint and dust with powdered sugar and cinnamon.
