Ingredients

  • 7 ounces udon
  • 4 cups chicken stock
  • 1 piece ginger (3/4-inch, peeled and grated)
  • 1/4 cup miso paste
  • 14 ounces boneless skinless chicken breasts (thinly sliced)
  • 4 ounces shiitake (sliced)
  • 1 bok choy (leaves separated)

Directions

  1. Place udon noodles in a medium bowl. Cover with boiling water. Drain and keep warm.
  2. Place chicken stock and ginger in a medium saucepan on high heat. Bring to a boil. Reduce heat to low. Add miso paste and simmer for 5 mins, until miso dissolves.
  3. Add chicken and mushrooms and simmer for 5 mins, until chicken is cooked through. Add bok choy and cook for 1 min, until wilted. Remove from heat. Stir in noodles and serve.
