Do you have leftover spaghetti in the fridge? Use it up in these tiny egg tortillas. Made with ham, cheese, and whatever else is leftover in your fridge, these egg tortillas will use up all of your leftovers while creating a delicious dinner for the family.

Ingredients

  • spaghetti (Cooked)
  • 2 eggs
  • 2 slices ham (small pieces)
  • 2 slices cheese (small pieces)
  • salt
  • olive oil (to taste)

Directions

  1. Cut the spaghetti in small pieces.
  2. Beat two eggs in a bowl. Add the spaghetti, and the ham and cheese. Season with salt, and mix well. The mixture shouldn't be too liquid.
  3. Heat a pan a pinch of olive oil. When it's hot, add the egg mixture in spoonfuls distanced from each other. Let cook well before turning.
  4. Turn over with a spatula, and cook until the egg is done.
  5. Serve immediately.

This is a very different recipe. I've never seen one combining these ingredients this way. The little tortillas that you make are packed with flavor. The cheese on the outside tastes great after frying in the pan and does great holding everything together while still being creamy on the inside with the ham. A nice dinner idea for that change in normal spaghetti.
