Tea sandwiches are just right for, well, afternoon tea, but also brunch, cocktail parties, or even a special lunch for kids, say at a birthday party. Since these are cut into heart shapes, they would also be charming treats for the valentines in your life. The sandwiches are filled with shrimp that have been baked, then peeled and halved, topped with sliced cucumber and arugula. Mayonnaise is spread on the bread slices, but mustard would also work.

Ingredients

  • 2 tablespoons coriander (chopped)
  • 2 tablespoons mayonnaise
  • 12 slices bread
  • 9 shrimp
  • arugula
  • 1/2 cucumber (small)
  • 2 tablespoons mayonnaise

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Mix the the cilantro with the mayonnaise.
  3. Cut the slices of bread into heart shapes.
  4. Spread the mayonnaise on the bread.
  5. Spread the unpeeled shrimp on a baking sheet and bake for 6 to 8 minutes. Turn once. Remove from oven and let cool.
  6. Peel the shrimp and cut them in half.
  7. Add 1-2 shrimp halves to each sandwich.
  8. Add a very thin slice of cucumber slice and a bit of arugula.
