Ingredients

  • 3 1/2 ounces marzipan (coarsely grated)
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup powdered sugar (plus 3 tbsp)
  • 1/2 cup canola oil
  • 3/4 cup all-purpose flour (sifted)
  • 1 teaspoon baking powder
  • pink food coloring

Directions

  1. Preheat oven to 350°F. Grease and flour 2-3 kugelhopf pans with 24 wells.
  2. Whisk together marzipan, eggs, vanilla extract and 3/4 cup powdered sugar until creamy. Slowly whisk in oil. Add flour and baking powder and mix until smooth. Tint batter pink with food coloring. Transfer to a piping bag. Fill wells 2/3 full with batter and bake for 10 mins. Let cool on a wire rack.
  3. Dust cakes with remaining powdered sugar.
