Ingredients

  • 125 grams white chocolate
  • 300 grams ricotta
  • 150 grams caster sugar
  • 3 tablespoons grated coconut
  • 1 orange flower water (cfsp)
  • 1/2 vanilla essence (cfsp)
  • 150 grams cream
  • 200 grams dried cranberries (plus 50 for decoration)
  • 3 tablespoons white chocolate chips (plus 1 tablespoon for decoration)

Directions

  1. Grate the white chocolate.
  2. With the help of a food processor, mix the ricotta, sugar, grated coconut, orange blossom water and vanilla extract, until a homogeneous mixture is obtained .
  3. Add the grated white chocolate, cranberries and white chocolate chips.
  4. Whip the cream in a bowl and add it gently to the previous preparation.
  5. Pour the obtained preparation into the mold.
  6. Keep in the freezer for about 4 hours.
  7. Unmold the ice log on a serving plate and garnish with a few cranberries and white chocolate chips.
  8. You may serve it with a fruit coulis.
