Mini Coconut Tartlets and Orange Curd

Description

Tangy curd meets a crispy coconut crust in these mini gluten free tartlets. This recipe calls for orange curd, but can also be substituted for other flavors of curd--the choice is up to you! You can make your own curd or purchase it at your favorite grocery store.

Ingredients

  • 3 egg whites
  • 100 grams sugar
  • 200 grams grated coconut
  • curds (Orange, to taste)

Directions

  1. 1Preheat oven to 180 degrees Celsius.
  2. 2In a bowl, whisk the egg whites until foamy, with sugar and grated coconut. It may seem that the result is a somewhat loose dough, but it actually works.
  3. 3Place a small ball of dough in small silicone tartlet pans. Use your fingers to open a hole in the center, and press the dough against the sides of the pans.
  4. 4Place the pans on a baking tray, and bake for about 10 minutes.
  5. 5Remove from oven, and let cool in the molds.
  6. 6When cold, fill the center with orange curd. Refrigerate until serving.
