This is a great recipe. I used the whole tortilla. And goat cheese and they were a really great and filling lunch.

I love these I made them for school lunch and they were amazing! I didn't change anything about it. I would defiantly make it again!

Looks great on a plate and it's delicious too! I also hated to waste parts of a perfectly good tortilla so I just used whole 8" tortillas and cut them into pieces after they were done. The only other modification I made was to add grilled chicken for a little more protein. Came out very tasty and could also be used as a healthy lunch in place of a sandwich!

We do appetizer or tapas night at least once a week in our house and these made a great addition! They were very simple to make with only a few ingredients and came out surprisingly tasty. I didn't cut the tortillas into smaller circular ones as the recipe instructed. Instead I just cut each quesadilla in half after it was made. I can see how it would make them "cuter" and easier for kids if they were cut into smaller circular tortillas but I didn't want to waste any tortilla and it seemed unnecessary to me.
