Description

They say an apple a day keeps the doctor away. In the spirit of good health, we suggest this recipe for Mini Apple Pancakes. Similar to latkes in texture, these Mini Apple Pancakes are made from shredded apples. Baking powder adds a bit of fluff and brown sugar adds a light sweetness to these pancakes. Lightly fried on each side, these Mini Apple Pancakes can be served with a dollop of greek yogurt on top or your favorite jam.

Ingredients

  • 2 granny smith apples
  • 1/2 tablespoon lemon juice
  • 2 tablespoons plain flour
  • 1/3 tablespoon brown sugar
  • 1/4 tablespoon baking powder (for cakes)
  • 1 eggs
  • 1/2 teaspoon ground cinnamon
  • 1 greek yogurt (sweetened)

Directions

  1. 1Peel the apples. Cut the apples in four pieces, and grate with the grater or processor. Sprinkle with lemon juice.
  2. 2In a bowl, mix all the ingredients well.
  3. 3Heat a frying pan with little bit of butter, and pour in the batter. Cook for only about 3 minutes (a bit like crepes).
  4. 4Clean the bottom of frying pan with a paper towel between each batch of pancakes.
