Ingredients

  • 2 tablespoons olive oil
  • 2 onions (finely chopped)
  • 1 leeks (trimmed, finely chopped)
  • 2 carrots (peeled, finely chopped)
  • 2 stalks celery (trimmed, finely chopped)
  • 3 cloves garlic (crushed)
  • 2 red chili peppers (small, finely chopped)
  • 2 cups vegetable stock
  • 14 ounces chopped tomatoes
  • 1 cup green lentil (rinsed)
  • 2 tablespoons marjoram (chopped)
  • 1 tablespoon oregano (chopped)
  • 3 1/2 ounces button mushrooms (finely chopped)
  • rye bread (Toasted, to serve)

Directions

  1. Heat oil in large saucepan over medium heat. Sauté onions, leek, carrots, celery and garlic for 8-10 mins until softened.
  2. Add chilies. Cook, stirring, for 5 mins. Stir in stock, tomatoes, lentils and herbs.
  3. Bring mixture to a boil. Reduce heat and simmer for 25-30 mins. Stir in mushrooms and season to taste. Serve with bread.
