Similar to deviled eggs (only they're not "deviled"), these hardboiled eggs are filled with a mixture of tuna, mayonnaise, onion and some of the yolks. Strips of zucchini and red onion are strewn on top, and the remaining yolks are grated over the stuffed eggs to resemble mimosa flowers, which abound along the Mediterranean coast in Provence. Get creative and stuff your mimosa eggs with your favorite ingredients, such as crumbled bacon and blue cheese or chili powder and finely chopped, pickled jalapenos.

Ingredients

  • 4 eggs (hard-boiled)
  • 2 cans tuna packed in oil
  • 3 tablespoons mayonnaise
  • 1/2 red onion (finely chopped)
  • lettuce (Green)
  • lemon
  • salt
  • 1/2 zucchini (julienned, to garnish)

Directions

  1. Peel the hard-boiled eggs, cut them in half and remove the egg yolks.
  2. Crumble up one of the egg yolks and place it in a bowl with the tuna, the mayonnaise, and the onion and stir well to combine until the mixture is uniform in consistency.
  3. Place the lettuce on a serving platter, squeeze some lemon juice over it and season with a pinch of salt.
  4. Fill the eggs with the egg yolk mixture and place them in the serving platter on the lettuce.
  5. Garnish with the julienne strips of zucchini, some thin slices of red onion, and the remaining crumbled up egg yolks which will give a mimosa flower effect.
  6. Serve.
