Made with vegetable oil and kefir, this cake is exceptionally moist and tender. You can find kefir, a cultured milk product, at health food stores and many supermarkets. Be sure to buy the unsweetened, unflavored variety for this recipe. Here the batter is divided in half, with one half left plain and the other mixed with cocoa powder, and the two are layered in the Bundt pan and marbled by running a table knife in a spiral fashion.

Ingredients

  • 3 eggs
  • 280 grams flour
  • 200 grams sugar
  • 130 milliliters corn oil
  • 1 tablespoon vanilla extract
  • 2 teaspoons baking powder
  • 320 milliliters kefir
  • 40 grams cocoa powder
  • powdered sugar

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Add the eggs, flour, sugar, corn oil, vanilla, baking powder, and 300 milliliters of milk kefir to a bowl and mix well.
  3. Lightly oil and flour a bundt cake pan.
  4. Pour half of the batter into the cake pan.
  5. Add the cocoa powder and remaining milk kefir to the remaining batter and mix well. Pour the cocoa batter on top of the plain batter in the bundt cake pan.
  6. Use a knife and run it through the batters to incorporate them creating a spiral effect.
  7. Bake the cake for 35 to 40 minutes. Use a toothpick to check for doneness.
  8. Sprinkle with powdered sugar, slice, and serve.

This was the first time I have ever made a recipe like this one; let me tell you it was extremely easy to do. I made this for my in-laws who were raving about how sweet and savory it was. They asked me to make them another one when I got a chance and they are some true critics. I will be making this Bundt cake again and give it 4 stars.
