Ingredients

  • 6 tablespoons canola oil
  • 2 onions (chopped)
  • 1/2 cup fresh ginger (finely chopped)
  • 5 cloves garlic (minced)
  • 1 red chili (deseeded and finely chopped)
  • 1 pound ground beef
  • 1 teaspoon ground coriander
  • 3/4 pound carrots (cut into thin strips)
  • 1 pound cabbage (shredded)
  • 8 cups chicken stock
  • 1 bunch fresh cilantro (roughly chopped)
  • 5 tablespoons soy sauce
  • 12 ounces cellophane noodles
  • onion rings (fried, to garnish)

Directions

  1. Heat 2 tbsp oil in a large saucepan, add onions and sauté for 3 mins. Add ginger, garlic and chili and sauté for 1 min. Mix 1/2 the mixture with ground beef, coriander and season. Shape into small meatballs then sear in remaining oil until golden brown.
  2. Meanwhile, add carrots, cabbage and stock to remaining mixture. Bring to a boil then simmer for 5 mins. Add seared meatballs and simmer for 2 mins. Add cilantro and soy sauce and remove from heat.
  3. To serve, cook noodles in boiling salted water according to package directions. Drain then add to soup. Ladle into bowls and garnish with fried onion rings.
