Microwave Chocolate Yogurt Bundt Cake

Description

If you usually only use your microwave to boil water, "bake" potatoes, or reheat leftovers, you're in for a revelation. With a microwave-safe Bundt pan, you can even "bake" cakes such as this one. Silicone pans are your best bet, requiring no greasing to be nonstick; otherwise you'll need to dust the pan with breadcrumbs (or flour) before pouring in the batter. Yogurt makes this cocoa-powder cake exceptionally moist. Serve dusted with powdered sugar.

Ingredients

  • 3 eggs
  • 200 grams sugar
  • coffee
  • 8 ounces yogurt
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 100 grams flour
  • 100 grams potato starch
  • 50 grams cocoa (bittersweet, powdered)
  • 2 teaspoons baking powder
  • 3/4 corn oil (full of, or rice bran oil)

Directions

  1. Beat the eggs with the sugar until foamy.
  2. Add the yogurt, salt, vanilla extract, flour, potato starch, and oil, a little at a time.
  3. Butter a 24 centimeter microwaveable bundt cake pan and coat it with breadcrumbs (if using a silicone mold it is not necessary to butter the mold and coat it with breadcrumbs).
  4. Bake according to your microwave baking instructions, approximately 15 minutes.
  5. Remove the cake from the microwave, cool it completely and sprinkle it with powdered sugar.
