Mezze Penne Pasta in a Pecorino Sauce

Description

There is nothing complicated about this luxuriously creamy dish consisting of penne pasta blanketed in peppery Pecorino cream sauce. Milk is called for, though you could substitute a mixture of half and half and heavy cream for even more decadant results. Do coat the pasta in the sauce before serving — it'll soak up the flavor while the al dente pasta finishes cooking a tad in the cream.

Ingredients

  • 400 grams penne pasta (small)
  • 200 grams pecorino cheese (aged, cut into small pieces)
  • 50 grams butter
  • 50 grams milk
  • salt (as needed)
  • ground black pepper (optional)

Directions

  1. 1Bring a stockpot of water to a boil.
  2. 2Add 1 tablespoon of salt and the pasta and stir.
  3. 3While the pasta is cooking, melt the butter in a small saucepan, add the pecorino cheese and allow it to melt, adding the milk, stir the sauce well.
  4. 4Drain the pasta when ‘al dente.’
  5. 5Place the pasta in a wide saucepan, add the sauce and stir well to season completely on low-medium heat.
  6. 6Add some black pepper and serve immediately.
