Ingredients

  • 4 slices white bread
  • 1/2 cup refried beans
  • 4 tablespoons corn (niblets, cooked)
  • mozzarella cheese (shredded)
  • 4 squash blossoms
  • 2 chile peppers (poblano, roasted, seeded, peeled, and sliced)

Directions

  1. Cover each slice of bread with a layer of refried beans.
  2. Cover two slices with a layer of corn and the other two slices with cheese, squash blossoms and Poblano peppers.
  3. Put both pairs of bread together to make two sandwiches. Grill the sandwiches on a sandwich maker or in a skillet until the cheese begins to melt.

I have never eaten squash blossoms on a sandwich before. I have only had them stuffed. This is a really unique vegetarian sandwich that could be served hot or cold. I really like this recipe a lot. I am going to try packing some of these for lunch.
