Each region of Mexico specializes in their own cultural foods and traditions. This particular recipe is well known throughout Mexico and it's many region. - 4 slices white bread
- 1/2 cup refried beans
- 4 Tbsp. corn (niblets, cooked)
- mozzarella cheese (shredded)
- 4 squash blossoms
- 2 chile peppers (poblano, roasted, seeded, peeled, and sliced)

Directions
- Cover each slice of bread with a layer of refried beans.
- Cover two slices with a layer of corn and the other two slices with cheese, squash blossoms and Poblano peppers.
- Put both pairs of bread together to make two sandwiches. Grill the sandwiches on a sandwich maker or in a skillet until the cheese begins to melt.
