Ingredients

  • 1 jicama (small, cut in thin strips)
  • 1 lime juice
  • 1 jalapeno chilies (red, cut into 1/2-inch long thin strips)
  • 1 purple onion (small, thinly sliced)
  • 20 ounces pineapple (sliced in natural juice, drained and cut into short strips)
  • 1 knorr cilantro minicub
  • 2 teaspoons grate lime peel

Directions

  1. Combine all ingredients in a large serving bowl; let stand at least 10 minutes. Stir before serving.

A very easy, simple and refreshing salad. (I used real cilantro) I might try some other vegetables in it too. Will become a staple in summer!
