I also used riced cauliflower in mine, and since that doesn't add as much volume to the mix as real rice I also added a can of fire-roasted tomatoes. With the peppers microwaved before baking (as recommended) they turned out with the perfect texture. Will make it again.

absolutely excellent! I like using Italian sausage instead of beef. It's better than you think!

Great! I didn't have salsa, so substituted with a can of rotel. Also added some black beans and corn to the mix.

Excellent Mexican stuffed peppers. I use turkey 90% lean instead of ground beef. I also added red onion. Turned out excellent topped off with some sour cream! This is a keeper.

Great recipe....I did use sweet red peppers and added black beans and Tabasco Chipotle to the meat while browning for a smokey hint of flavor and some heat. I had extra meat mixture left over and yes we made loaded nachos.

We used poblano peppers, and red and green salsa mixed together. Added 8 ounces tomato sauce to bottom of pan. Made a serving for 8, comes in at 239 calories for 1 pepper, because I didn't split them in half. They were small, really delicious! I will make them again! Can put on slow cooker on low for 4 1/2 to 5 1/2 hours.

We loved these! I added black beans and corn and I used Paul Newmans mango salsa. Could have used more taco seasoning since the mango salsa is so mild. This is def in the rotation!

I made a version of this that was loved by my whole family. Instead of rice I used quinoa, instead of ground beef I used ground sausage(😈), I also added black beans, and roasted corn (roasted on bbq). Turned out great!
