Great salad recipe! I’ve made this salad twice now. Simple and quick yet flavorful. Greatly exceeded my expectations.

Wow, can't believe I waited so long to try this one; it is fantastic! I love that it has all the components of Mexican street corn, with the healthy addition of arugula which goes beautifully with the flavors! It is a real party of texture and flavor with the cold peppery greens, warm, sweet corn, the salty cotija, creamy sauce all topped off with cilantro and chili powder AND smoked paprika to bring all together. This is a definite keeper!!
