Easy and absolutely delicious. I like to combine elements of similar recipes that interest me, but you can ignore… 1 carrot chopped, 1 stock of celery chopped, a bay leaf, more garlic, 8 mini potatoes chopped, a handful of rice. I omitted the red bell pepper and salsa.

Very good and would make it again for sure. I chopped few tomatoes instead of using canned. I’d replace the mild salsa with a medium heat for extra kick. Used regular and smoked paprika. Worked great

I've made this a few times now. I used Chipotle powder instead of the smoked paprika. I also start the base with a mix of olive oil and margarine. It really sets the dry spices off before adding the broth. This is just as good cooked in a crockpot or on the stove.
The winning feeling is when the kids ask for more.

It is amazing! I didn't put a lot of the "hot" stuff in it. just medium salsa and 1 tsp pepper. I used Aldi's tomatoes with seasoning.
