DO NOT BAKE! There’s just no point and it wastes time. The rest of the recipe was pretty good for making a burrito bowl. I added a can of kidney beans and corn.

I’ve made this recipe a couple of times now, it’s super easy and really tasty. It’s a pretty healthy recipe but you wouldn’t think it. I followed the directions as is except switched the mozzarella to Mexican cheese blend

I replaced the black beans with pinto beans and added chili beans for more fiber content ...used half quinoa, half brown rice. My daughter and husband loved it, my granddaughter even liked and she doesn't like spicy foods.

I didn't add chili powder cause I'm a bit of a spice wimp, but I did add an additional red bell pepper. I love how creamy and indulgent this recipe feels, even when it's actually quite good for you! I've also never found any recipe that made me like quinoa quite as much as this one.
