  • 1/2 onion (a large, diced)
  • 5 cloves garlic (smashed)
  • 1 tsp. ginger
  • 1/2 apple (a medium-size, or pear, 65 grams or a mixture of both, diced)
  • 1 1/2 Tbsp. unsalted butter
  • 1 Tbsp. curry powder
  • 1/4 tsp. ground cumin
  • 2 cups chicken stock
  • 1/4 cup whole milk
  • 3.5 oz. curry (Japanese, cubes, such as this one)
  • 0.5 oz. bittersweet chocolate (or 2 tsp of coco powder)
  • 17.6 oz. ground beef (or a mixture of ground beef and pork)
  • 1/2 onion (medium-sized, very finely diced)
  • 2 tsp. worcestershire sauce
  • 1 tsp. sea salt
  • 1/2 tsp. freshly ground black pepper
  • 2 cups panko breadcrumbs (Japanese, or see instruction on how to make your own)
  • 4 Tbsp. peanut oil (ONLY if pre-baking)
  • 1/2 tsp. sea salt
  • 1/4 tsp. freshly ground black pepper
  • 1/2 cup all purpose flour (seasoned with a bit of salt’n pepper)
  • 2 large eggs (beaten and seasoned with a bit of salt’n pepper)
  • vegetable oil (for frying)
  • 1/2 green cabbage (Asian)
  • 2 Tbsp. sesame (toasted white)
  • 2 Tbsp. sesame (toasted black)
  • 1 Tbsp. sesame paste (preferably Japanese-type that’s lightly toasted, but tahini could probably work too)
  • 1 Tbsp. light soy sauce
  • 1/2 Tbsp. mayonnaise
  • 1/2 Tbsp. rice vinegar
  • 1 tsp. toasted sesame oil
  • 1 tsp. sugar
  • 1 tsp. ginger (grated)
  • 2 Tbsp. water (to dilute)
