Ingredients

  • 1 melon
  • 2 red onions
  • olive oil (5 cl.)
  • 6 tablespoons balsamic vinegar
  • 60 grams walnuts
  • chives

Directions

  1. Preheat oven to 210C.
  2. Slice the melon lengthwise.
  3. Cut the onions into 8 wedges, and sprinkle with olive oil and vinegar.
  4. Bake for 10 minutes, add the nuts, and bake for another 7 minutes.
  5. In a bowl put the melon mixture and the nuts/onions and add some chives.

I was not sure how this salad would turn out; upon trying it once I have made it 6 times. The red onion provides a hotness to the salad, calmed by the juicy melon, and accented by the hint of walnut.
