I think goat cheese tastes better when grilled so I placed the filled tortillas in a panini maker for about five minutes to toast them and get the cheese melted a little. 1/4 cup of pesto is too much for just 4 servings. I used a couple of teaspoons to layer each tortilla with the pesto sauce and that was an ample amount. Other than that, the vegetable mix pairs great with the cheese, and the avocado counterbalances perfectly the savouriness. A great idea for a quick lunch.
