  • 1 cup TruRoots Organic Sprouted Quinoa
  • 1/3 cup extra-virgin olive oil
  • 2 tablespoons Santa Cruz Organic Pure Lemon Juice
  • 2 teaspoons minced garlic
  • 1 teaspoon dried oregano leaves
  • salt
  • pepper
  • 15 ounces chickpeas (rinsed and drained)
  • 1/2 cup red bell peppers (diced)
  • 1/2 cup sliced green olives
  • 1/2 cup diced red onion
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons Italian parsley (minced)

    Directions

    1. COOK quinoa according to package directions. Cool to room temperature. Fluff with fork.
    2. WHISK oil, lemon juice, garlic and oregano in large bowl. Season to taste with salt and pepper.
    3. ADD quinoa, chickpeas, peppers, olives, onion, cheese and parsley to bowl. Stir to combine. Chill 30 minutes to blend flavors.
